The base of the product is their special tamari shoyu, made with only carefully selected domestic soybeans, salt, and koji to ensure the best taste possible.
The tamari is then mixed with a delicious stock made with bonito and ayu sweetfish, blended with the crystal clear underground water of the Nagara river, which has been simmered without boiling to retain the rich flavor and umami.
The ayu sweetfish that swim in the Nagara river are Gifu's main specialty, and are known across Japan for being extra delicious.

To use as a dipping sauce for noodles, dilute with 4 to 5 parts water. To flavor nimono (simmered vegetables or meat), dilute with 2 to 3 parts water.
